Under cooking sausage before baking breakfast casserole?

I am making a breakfast casserole for tomorrow morning and the recipe calls for me to fridge overnight most of the ingredients before adding some more in the morning before cooking it. I browned the sausage patties, but when I was slicing them up, I noticed that there was a pink slit throughout the middle in all of them. I put it in the casserole anyways because later it will be baked in the oven. Is that ok? I have a fear that the oven will not get hot enough (300 degrees for 1.5 hours) to kill any possible parasites I may have mixed in with the casserole. I am paranoid (and a very inexperienced cooker). Help!

i am sure it will continue cooking when you bake it…the only concern is by fully cooking them before baking you render all of the excessive fat …so hopefully they are almost fully cooked and won’t cause excessive grease in the dish…good luck!
