I read a book and the setting is in England fishing village, NY.

These two pots of delicious eggs. Frittata 2 teaspoons olive oil 2 / 3 cup chopped red onion 2 / 3 cup chopped red bell pepper 2 cloves garlic 3 slices of bacon 4 mushrooms 1 cup corn kernels, fresh or frozen whole kernel corn 1 jalapeno pepper, egg beaters, seeded and finely chopped 2 cups 1 / 3 cup finely chopped cilantro 1 teaspoon salt 2 / fresh (optional) pinch of black pepper, a layer of a large (oven usable) with cooking spray-stick pan. Add the olive oil and medium heat. Heat Add onion, garlic and red peppers and cook, stirring, for 3 minutes. Add corn, jalapeno peppers and cook, stirring, for 3 minutes to lightly. In a small bowl, combine eggs, cilantro, salt and black pepper. Add to skillet and stir to distribute the mixture. also add cooked bacon and cook the mushrooms for 5 minutes, gently lifting the egg mixture into the sides of the pan with a spatula as it freezes. Cook until eggs are set at the bottom but still moist on top. Remove from heat. If desired, sprinkle the cheese on the cheese over the grill for 3 minutes or until the surface is golden. Use a spatula to loosen the frittata from the pan and slide onto a plate. Cut into slices to serve. ******* Strada 1 pounds 7-8 sausage slices of fresh bread (crusts cut) 1 / 2 cup margarine and 1 1 / 2 cheddar cheese A small sliced mushrooms (drained) 1 / 2 onion chopped (optional) 1 / 4 cup tea. A half pint of dry mustard and the other half (can use fat-free variety) 6 eggs salt and pepper to taste butter the bottom of a 9×13 casserole. Butter one side of each bread slice and place in dish, buttered side up. Saute the onion and sausage until brown and crisp. In a bowl, combine eggs, half and half and mustard condiments. Pour egg mixture over bread, top with sausage / onion, layer of sliced mushrooms, a layer of cheese. Cover and refrigerate overnight. Bake uncovered at 350 degrees for 45 minutes to 1 hour. Cool 10 minutes. Cut into squares to serve.
