Celery Relish

Here are three "this and that" the recipes that are particularly suitable for diabetics or other people watching their sugar intake. These recipes also make great gifts for diabetics. They are perfect for holiday gifts, birthdays, openings, Hostess gifts, etc. or who are great in their own fridge.

The freezer pickles are great to have in the fridge for unexpected guests. They also go great with sandwiches, soups, meats, etc. to give a different touch food for diabetics.

FREEZER PICKLES

7 cups sliced cucumbers

1 cup onion, sliced or diced

1 / 2 cup chopped bell pepper

3 C. teaspoon salt

2 cup Splenda

1 cup vinegar

1 teaspoon celery seed tea

Cover the cucumbers, onions and peppers with salt and let stand one hour. Drainage. Mix and add Splenda, vinegar and celery seed. Pour over cucumber mixture. deposited freezeable containers and freeze or refrigerate for 3 days before eating.

This sauce is fishing very well with the meat, but especially perfect pork. Also good as an appetizer when poured over a block of cream cheese and served with crackers.

PEACH SAUCE FOR MEAT

1 teaspoon tablespoons olive oil

2 cups sliced red onion

3 cups peeled and chopped peaches

2 cups chopped tomatoes

2 v. tablespoon chopped fresh ginger or 1 tablespoon ground ginger tsp

1 / 2 cup cider vinegar

Juice of 1 / 2 orange big + water to make 1 / 2 cup

5 c. tablespoons Splenda brown sugar blend

1 teaspoon of tea Allspice

1 / 4 cup of tea, salt, optional

1 / 4 cup black tea

In a large nonstick skillet over medium-high heat, heat the olive oil. Add onion and cook about 10 minutes, stirring frequently. Add the peaches, tomatoes and ginger, cook 2 minutes. Add remaining ingredients and simmer. Reduce heat and simmer 20 minutes. Place the mixture in a food processor or blender until smooth and a process or leave the consistency of the sauce to pour over a block of cream cheese.

Yield 3 cups

Store leftover sauce in refrigerator.

Grill or roast a fillet steak or other meat choice, cut into thin slices and sprinkle with corn and tomato sauce.

Corn and tomato RELISH

This is a great appetite to serve over meat or other meats.

2 cups sweet corn kernels

1 cup chopped and seeded tomatoes

1 / 4 cup roasted red bell pepper packing

2 v. tablespoons sherry vinegar

1 teaspoon tablespoons of extra virgin olive oil

3 / 4 cup kosher salt tea

Chopped fresh parsley, optional

Spray a skillet large non-stick coating of cooking oil and heat over medium-high heat. Add corn to skillet and cook 5 minutes until they are lightly browned. Remove the heat, add tomatoes and remaining ingredients except parsley. Pour over steaks or other meats. Garnish parsley if desired.
