Sugar Lid

Souchong tea smoked Chicken Wings

Ingredients

3 pounds chicken wings – (16 wings)
3 cloves garlic
1 tablespoon ginger root – grated
1 tablespoon honey
3 / 4 cup soy sauce
1 / 2 cup sherry
1 cup brown sugar
1 cup of Lapsang Souchong tea – (loose
Sesame seeds – for garnish

Method

1. With a knife, separate the right leg and the mini section between the joints. Cut the wing tip off and discard. (all good butcher will do it for you.) Wash and dry chicken.

2. Using metal blade of your processor, finely chop the garlic.

Add the grated ginger root, honey, soy sauce and sherry, treatment 20 to 30 seconds to mix well. Pour the marinade into a 9 by 13 inch bowl and add the chicken wings. With a spoon, drizzle marinade on all wings. Cover and refrigerate at least 2 hours, turning chicken wings at least once.

3. Smoke chicken, choose a heavy steel or cast iron skillet or baking dish with a lid that fits properly. Line bottom of pan with heavy-gauge aluminum. Sprinkle brown sugar and tea at the top of the page.
Place a cake rack in the pan, sugar and tea mixture, and arrange the chicken wings on the grill.

Cover the pot or pan with a lid (or top heavy paper if not perfectly). Convert your kitchen extractor. Turn the burner on high and leave the chicken over high heat for 30 minutes (see note). Do not remove the lid to check. Turn off lights after 30 minutes, and keep the chicken covered for another 20 minutes.

Smoked chicken will keep several days if tightly wrapped and refrigerated.

6 to 8 servings as an appetizer.

Note: As with any recipe that requires a dish to cook over high heat, we care. As the smoke from this plate is not issued, it is imperative to use the exhaust fan in the kitchen and a frying pan or skillet with a tight fitting
cover.

NOTES: smoking tea is a traditional Chinese approach to the preparation chicken. To the Western eye, the skin is dark Cajun-style cuisine. These tasty chicken wings in small bites make a delicious appetizer when served plain or with your favorite mustard, peanut or teriyaki sauce.

Sesame Chicken Wings

Ingredients

36 chicken thighs (bottom
2 teaspoons ground coriander
Chicken Wing Party)
3 tablespoons soy sauce
20 milliliters garlic
3 tablespoons fresh lemon juice
1 inch fresh ginger – peeled
Spoon 2 tablespoons sesame oil
1 onion – quarter
2 tablespoons sugar
1 teaspoon flakes red pepper
1 / 2 cup sesame seeds (approx.)
2 teaspoons salt

Method

Wash the chicken pieces and dry. Place in a bowl. Combine remaining ingredients except sesame seeds in a blender and grind. Pour mixture over chicken and stir to coat all pieces.

Refrigerate at least 2 hours.

Remove chicken from marinade and sprinkle with sesame seeds. Broil 5 to 6 minutes per side. Serve hot. Makes 6 to 8 appetizer servings.

Teriaki Chicken Wing Dings

Ingredients

1 / 3 cup lemon juice
1 / 4 cup tomato sauce
1 tablespoon salsa / 4 cup Soya
1 / vegetable oil 4 cups
2 tablespoons brown sugar
1 / 4 powder C. teaspoon garlic
1 / 4 cup pepper Tea
3 pounds chicken wings
Remove wing tips and cut at the joints.

Method

Combine all ingredients and mix well, add chicken. Cover and refrigerate at least 6 hours or overnight, stirring occasionally. Preheat oven to 375f.

Place chicken on an aluminum-lined shallow pan. Bake 40
45 minutes, basting occasionally with the marinade.

Refrigerate leftovers and enjoy!

Thai BBQ Chicken Appetizers

3 pounds chicken wing Drummettes

Ingredients marinade

1 / 4 cup minced garlic
Cilantro 1 billion – cutting the roots and leaves reserved for garnish
1 teaspoon turmeric
1 teaspoon curry powder
1 1 / 2 c. clay tea to Chile
1 tablespoon sugar
1 / 4 cup of salt tea
3 tablespoons fish sauce Thailand

Basting liquid ingredients

1 / 2 cup coconut milk

Sauce Ingredients

1 / 2 teaspoon chili flakes
2 cloves garlic – - chopped
1 tablespoon brown sugar
1 / 4 cup of salt tea
1 / 2 cup red rice vinegar China
1 green onion – chopped
1 tablespoon chopped cilantro leaves

Method

All ingredients Process marinade in a blender until smooth. Make Chicken marinated, chilled, overnight. Grill over hot coals until done, brushing frequently with coconut milk. Garnish with cilantro sprigs accompanied by steamed rice and dip containers.

Saucy Sweet Sour Chicken Wings

12 chicken wings – tips removed

Marinade ingredients

Water 1 / 2 cup
1 / 4 cup oil
3 / 4 cup sugar
Tomato sauce 1 / 4 cup
Vinegar 1 / 4 cup
1 tablespoon of coffee garlic salt
Bouillon 1 / 2 teaspoon instant chicken

Method

Cut each wing two, put them in a large zippered bag, add all marinade ingredients, seal bag. Turn bag to coat wings. Refrigerate at least 4 hours until 24 hours, turning the bag occasionally.

Preheat oven to 375 ~. Drain chicken, reserve marinade. Place chicken on baking sheet. Bake for 45-60 minutes, basting occasionally with the marinade.
